Every open-door minute exposes refrigerated freight to outside air and weakens the controlled cargo environment.
The first change usually appears in the air near the opening. The larger risk comes from repeated or prolonged exposure: added heat, disrupted airflow, longer recovery time, and temperature data that may be difficult to explain at delivery.
For perishables, door-open time is part of shipment control.
Why Door Openings Matter
A refrigeration unit maintains conditions by circulating air around the load. Opening the doors introduces outside air and interrupts that pattern. The USDA/UF IFAS guide identifies “warm air infiltration when doors are opened” as a source of heat entering refrigerated equipment. It also explains that the effect of an excursion depends on its duration and the outside environment.
One brief opening, by itself, proves little about product condition. Air, product, supply-air, and return-air readings measure different conditions, and sensor placement affects what the record shows. But a long opening on a hot dock — or repeated openings across a multi-stop route — can create cumulative exposure. Product near the doors may experience different conditions from product deeper inside the load.
Why a Temperature Spike Can Trigger Rejection

A defensible review must reconstruct the event: whether the vehicle was unloading or waiting, where the sensor was located, how long the reading remained outside the required range, and whether product temperature changed with the surrounding air.
Without that context, a normal loading event can become a dispute. A setpoint shows the target, while a single air reading describes conditions at one place and time. Neither establishes the complete condition of the product. The USDA/UF IFAS guide distinguishes product, surrounding-air, return-air, and supply-air measurements and recommends recording each sensor’s location.
The FDA’s Sanitary Transportation rule requires equipment used for safe transporting of food, which needs temperature control. It also identifies improper refrigeration, loading, unloading, and holding practices as transportation concerns.
Control the Minutes Before They Accumulate
Door-open exposure is easiest to control before loading or delivery begins.
Before opening the vehicle, confirm dock availability, the receiving contact, loading sequence, temperature instructions, and paperwork. Stage the product at the correct time, and close the cargo area during extended pauses.
For multi-stop routes, arrange freight in delivery order so crews can reach the next drop without moving later-stop pallets. When temperature evidence may require context, record arrival, door-opening, unloading, and departure times.
Monitoring also requires interpretation. A short air-temperature rise near the doors differs from a sustained excursion across the load. Temperature data becomes useful when it connects the reading to time, location, sensor placement, and the event that caused it.
